Memorial Day Recipe: Shrimp Skewers

Fire up the barbie for Memorial Day!  I just got a grill and I'm obsessed.  So fun!  Plus, this weather has been perfect.  So, fire up the grill and enjoy!  In the summer months, try my Sweet Potato Salad and these yummy Rosemary Shrimp Skewers. Recipe featured in the Capital Cooking Cookbook

10 large shrimp (peeled and deveined)
1 green pepper cut into small squares
1/3 Cup olive oil
2 tablespoons of fresh rosemary (chopped)
3 tablespoons of fresh parsley (chopped)
3 tablespoons of fresh lemon juice
Salt and pepper

Soak your skewers in water so they won't burn on the grill. Get the grill ready or use your trusty grill pan like me. Alternately place the shrimp and green pepper squares on the skewers. Whisk together the olive oil, parsley, lemon juice and rosemary in a small bowl. For a great alternative, check out J.D. Gourmet's Rosemary Olive Oil and just add the lemon juice and parsley. Brush the oil mixture onto the shrimp and season with salt and pepper. Grill the shrimp on high heat for about a minute and a half per side and serve immediately. This is the perfect appetizer for your meal.
